I like the peanut butter in between the Ritz cracker recipes above. For a an even quicker treat, put a mini reece's cup on a Ritz, zap for a few seconds in the microwave and squich it with another Ritz. I imagine you could also dunk it in melted chocolate.
I"ve made these cookies for many years and I find they taste much better if you use dark chocolate wafers and add peppermint oil to the chocolate instead of using mint flavored chocolate. of course many people prefer milk chocolate which taste very good too.
These are sooooo simple to make and delicious! Almost better than a thin mint.
We make a version of these using Ritz with peanut butter sandwiched in between two tasty layers. I dunk them in milk chocolate, chocolate and white chocolate and give them out at the holidays.

I was very please with the outcome - delicious! I made them today for a church function which I just found out is rescheduled for next week. I'll let you know if they are as delicious one week later! This is a great recipe for Moms to share with kids for a fun activity. I have to admit I was a "Doubting Thomas" initially! Sincerely, Mary B.
I wasn't sure that I would like the combination of chocolate and Ritz, but they were delicious. I also tried it with the Ritz peanut butter bits, which were even better!
I take 2 ritz crackers put peanut butter between them,then dunk into the melted chocolate or into melted white chocolate.A big hit with the family.I recieved this from a best friend 23 years ago.oh yeah,once dipped lay on parchment to harden.

Way to labor instesive for me. I tried it and the chocolate metled and then harden up and wouldnt re melt for me.AHHH It was a disappointment but the 6 that did come out were delicious...........BUMMER
My mother made something similar for years. She sandwiched two Ritz with peanut butter, then dipped them in melted chocolate bark. It's still a family favorite.
Can the Ritz mints be refrigerated or will this make the cracker soggy? It is warm here.
I tried them with the Wilton dark mint chocolate. SUPERB!!!! So simple yet so delicious!!
Delicious!!! But I would get two bags next time --- I was pretty generous on the chocolate I guess.
