Brine Solution

This recipe is courtesy of Carmen Gonzalez and should be used in her Plantain-Stuffed Pork Loin recipe.

  • Yield: Makes enough for one 1 1/2-pound pork loin

  • 1/2 cup coarse salt
  • 1/2 cup packed light-brown sugar
  • 1/4 cup chile powder


  1. Place 2 cups water in a large pot along with salt, brown sugar, and chile powder. Bring to a boil over high heat, stirring, until salt and sugar have dissolved. Remove from heat; let cool completely before using.
