All-Around Spice Rub

  • Yield: Makes about 2/3 cup


  • 3 tablespoons whole coriander
  • 3 tablespoons whole cumin seeds
  • 3 tablespoons whole fennel seeds
  • 2 tablespoons sugar
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon sweet paprika
  • 4 teaspoons coarse salt
  • 1/2 to 1 teaspoon cayenne pepper


  1. In a spice grinder, combine coriander, cumin, and fennel seeds. Process until finely ground. Transfer to a small bowl, and stir in sugar, pepper, paprika, salt, and cayenne pepper. Will keep at room temperature in an airtight container for up to 3 months.
