Turkey Meatloaf

This heart-healthy recipe for turkey meatloaf, courtesy of Dr. Brent Ridge, is used to make both Martha's and Kathleen Turner's turkey meatloaf sandwiches.

Ingredients

  • 2/3 cups panko (Japanese) breadcrumbs
  • 1/2 cup milk
  • 3 pounds lean (7 percent) ground turkey, preferably organic
  • 1 medium onion, finely chopped
  • 2 large eggs, lightly beaten
  • 1/4 cup plus 2 tablespoons ketchup
  • 1/4 cup chopped flat-leaf parsley
  • 1 tablespoon plus 1 teaspoon Dijon mustard
  • 1 tablespoon coarse salt
  • 1 teaspoon rubbed sage
  • 1/2 teaspoon pepper

Directions

  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Place panko and milk in a large bowl; stir until well combined. Let stand 5 minutes.

  3. Step 3

    Add turkey, onions, eggs, 1/4 cup ketchup, parsley, mustard, salt, sage, and pepper to breadcrumb mixture. Gently mix until well combined. Transfer mixture to a 9 3/4-inch-by-5 3/4-inch loaf pan. Brush top with remaining 2 tablespoons ketchup.

  4. Step 4

    Transfer meatloaf to oven and bake, draining any accumulated juices as necessary, until it reaches 165 degrees on an instant-read thermometer, 1 1/2 to 1 3/4 hours. Serve immediately or use to prepare sandwiches.

    The best turkey meatloaf ever. Maybe the best meatloaf ever. I think a Tablespoon of coarse salt is too much. I cut that down to a generous teaspoon. 93% lean ground turkey is ideal, but 85% works too. I don't always use a loaf pan, usually just a baking sheet. Sometimes I've added chopped red pepper. Bonus - you get to think about Kathleen Turner and Martha while you make it and enjoy it with friends. Great conversation starter. Excellent for a midnight snack sandwich with a glass of milk.

    This was a fantastic meatloaf. Not being a fan of ketchup I initially had my doubts but it was great. A great way to utilize those on hand panko bread crumbs. I didn't have any sage handy so I used some Bell's seasoning.

    Love this recipe!!! My husband was hesitant about "turkey" meatloaf, but it was a big hit! I also halve the recipe for our small family and it usually cooks in less time, about 50-60 minutes.

    3 pounds? I'd like to see a recipe divider on this website, as some recipes are way too much to make for a small family or couple.

    My hubby works for Butterball so as you can imagine, it has a company store so we eat turkey practically 7 days a week. Turkey is very versatile!!! We even made Chinese steamed dumplings last weekend with turkey, it was YUM!! Ground turkey, turkey burgers, whole turkey's, turkey breasts, breast strips, turkey mignons....you name it! Turkey tacos and turkey nachos are our favs as well as meatloaf. If u can use burger u can use ground turkey!

    I've never used turkey this way and was pleasantly surprised. An excellent family meal, we did not have enough for sandwiches the next day! I used regular bread crumbs as I could not find the Panko crumbs. It was delicious!

    I just purchased a box, and they appear to be more coarse (think kosher salt) than regular breadcrumbs. Also, there are no additional seasonings added to them. They worked very well in this recipe. I've heard Martha mention her preference for Panko breadcrumbs a few times on her show.
