In a medium bowl, pour 1 cup boiling water over couscous. Cover and let sit until tender, 5 minutes. Fluff with a fork. In another medium bowl, combine chicken, pistachios, orange, mint, oil and vinegar. Season with salt and pepper. Toss couscous with chicken mixture.
Light and refreshing, perfect for a warm day. The flavor was delicious. It was quick and easy to make and my 2 year old loved everything but the mint (she doesn't like the texture of lettuce). The only thing I would add is a vegetable of some sort, not sure what I'll add for next time.
