Nobu's Ama-Zu

This recipe adapted from Nobuyuki Matsuhisa's "Nobu Now" (Clarkson Potter, 2005)

  • Yield: Makes about 1 cup

Ingredients

  • 1/4 cup rice vinegar
  • 3/4 cup sugar
  • 1 tablespoon plus 2 teaspoons sea salt

Directions

  1. Combine rice vinegar, sugar, and sea salt in a pan over low heat until sugar dissolves.
