- Yield: Makes enough for 1 pint shucked oysters

- 1 cup cornmeal
- 1 teaspoon chopped fresh thyme
- 1/4 teaspoon coarse salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne
- 2 teaspoons minced fresh flat-leaf parsley
Mix all ingredients together in a small bowl or pie plate. Adjust seasoning, if desired.
