Roasted Cauliflower with Cheddar

Cauliflower gets caramelized in the oven and is topped with cheddar cheese. This side goes well with grilled steak, meatloaf, lamb chops, or roasted lamb.

  • servings: 4




  • 1 head cauliflower, cut into medium florets
  • 1 tablespoon extra-virgin olive oil
  • coarse salt and ground pepper
  • 1 cup grated cheddar (4 ounces)


  1. Step 1

    Preheat oven to 450 degrees. On a rimmed baking sheet, toss cauliflower with oil and season with salt and pepper. Cook until tender, about 20 minutes, tossing halfway through. Push cauliflower to center of sheet and top with grated cheddar. Return to oven and cook until cheese melts, about 2 minutes. Toss again before serving.

    Made this as part of Easter dinner and it was a big hit with everyone, including picky teens and people who usually don't like cauliflower.

    So Delicious! I love that this recipe didn't mask the flavor of the cauliflower ( I reduced the amount of Cheddar cheese by half)
