Preheat oven to 450 degrees. On a rimmed baking
sheet, toss cauliflower with oil and season with salt and pepper. Cook until tender, about 20
minutes, tossing halfway through. Push
cauliflower to center of sheet and top with grated cheddar. Return to oven and cook until cheese melts, about 2 minutes. Toss again before serving.
Made this as part of Easter dinner and it was a big hit with everyone, including picky teens and people who usually don't like cauliflower.
So Delicious! I love that this recipe didn't mask the flavor of the cauliflower ( I reduced the amount of Cheddar cheese by half)
