- 1 shallot, finely chopped
- 1 tablespoon grainy mustard
- 1 tablespoon fresh lemon juice
- 1 tablespoon sherry vinegar
- 1/2 teaspoon each finely chopped fresh thyme and tarragon
- Coarse salt and freshly ground pepper
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
Whisk together shallot, mustard, lemon juice, vinegar, thyme, tarragon, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Gradually whisk in oil.
