Herb Vinaigrette

Ingredients

  • 1 shallot, finely chopped
  • 1 tablespoon grainy mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon sherry vinegar
  • 1/2 teaspoon each finely chopped fresh thyme and tarragon
  • Coarse salt and freshly ground pepper
  • 1/4 cup plus 2 tablespoons extra-virgin olive oil

Directions

  1. Whisk together shallot, mustard, lemon juice, vinegar, thyme, tarragon, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Gradually whisk in oil.
