    Everyone devoured these. For someone who loves bacon and potatoes, I didn't think they were any big deal, but I was the only one. Somewhat difficult to get the toothpick through the raw potato, even halved. Maybe a quick boil next time to soften them up enough to put a toothpick through without breaking the potatoes. I will serve them again though, since everyone else loved them.

    I found the "recipe" and my hubby made it for Christmas dinner appetizers. I bought really good, thick cut deli bacon and gold mini potatoes. He cut some of the potatoes in half so they could be bite-sized. He was smart and roasted them on parchment. One small bag of potatoes made 45 bites. He roasted them for 60 minutes and got a wonderful crisp outside and creamy smooth inside. They FLEW off the tray! So simple and so good! We will try pepper bacon next! Yum!

    Delicious! Made this as a side dish to roast leg of lamb. Roasted them a few hours ahead and reheated them in the oven jus before serving. 4 stars.
