Acorn Squash Soup with Kale

Look for squash with smooth skins and no soft spots or blemishes. They should also feel heavy for their size.

Ingredients

  • 4 strips bacon, 4 ounces, cut crosswise into 1/2-inch pieces
  • 1 medium onion, finely chopped
  • 1/2 pound kale, thick stems removed, leaves finely chopped (about 8 cups)
  • 4 cups Acorn Squash Puree, or 2 packages (12 ounces each) frozen winter squash puree, thawed
  • Coarse salt and ground pepper

Directions

  1. Cook bacon in a large saucepan over medium heat, stirring occasionally, until crisp, 4 to 5 minutes. Using a slotted spoon, transfer bacon to a paper-towel-lined plate; set aside.
  2. Add onion to fat in pan, and cook until softened, 4 to 5 minutes. Add kale; cook until soft, 3 to 4 minutes.
  3. Add squash puree and 3 cups water (or more if necessary to achieve desired consistency); bring just to a boil. Season generously with salt and pepper. Serve, garnished with reserved bacon.

    Its a wonderful soup, that is easy to make and its Martha's version of the fall season for your tastebuds. Starbucks has pumpkin spice latte and Martha Stewart the Acorn Squash soup with Kale. It is absolutely DELICIOUS and super easy!! Rich and full of flavor. I added sweet potatoe because I was short on acorn sqush and used chicken broth to enhance.

    This was more delicious than I ever could have imagined. I have never cooked with acorn squash or kale. I used 2 cans of chicken broth in place of water, 2 bunches of kale and two acorn squash but otherwise followed the recipe exactly. I served this with smoked chicken and apple sausages roasted with baby gold potatoes and cremini mushrooms, but this soup was hearty enough to serve by itself. It was even better the second day! It was so easy and satisfying that I'll surely make it often.

    I just made this recipe except that I added some chicken broth and pureed the whole thing! delicious and soooooo easy. I pureed the squash using the microwave and it was a breeze!

    I just made this soup and it was very enjoyable. The recipe is SO easy (especially if you have frozen homemade puree). I cooked six pieces of bacon for the topping and next time will cook eight (it really makes the soup). Served it with Martha's No-Knead Dinner Rolls and Spiced Carrot Cake -A great meal!

    I made this soup last night. My BF loved it! It was simple and filling. I added red chili flakes and chili powder. It was a nice combo with the sweetness of the squash.
