Emeril's Oven-Roasted Chicken Wings

These chicken wings are easy to make and fun to eat with kids.

Ingredients

  • 4 pounds chicken wings, cut in half at joint (wing tips removed)
  • 1/4 cup fresh lemon juice (from 2 lemons)
  • 1 tablespoon ground pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons coarse salt
  • 2 teaspoons dried thyme
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • Blue cheese or ranch dressing, or barbecue sauce, for dipping

Directions

  1. Preheat oven to 500 degrees. Line a large rimmed baking sheet with foil. In a large bowl, toss chicken wings with lemon juice. Add pepper, garlic and onion powders, and salt. Add thyme, crushing it between your fingers as you go. Add cayenne and melted butter. Stir mixture thoroughly, then arrange wings in one layer on baking sheet.
  2. Cook 20 minutes, then rotate sheet and flip wings. Cook until wings are browned and cooked through, 10 minutes. Serve with desired dipping sauce.

    They are so good when they are oven roasted like this. The flavor really steps up when you cooking like this. They will melt in your mouth for sure. Ontario Highlands

    Wow! These wings were delicious! The only thing I wouldn't do again is use foil on the pans. I used a cooking spray, hoping it would eliminate any sticking, but they still did. We enjoyed them anyway. We will make these tasty wings again!

    Whole family went crazy for these! Definitely a fave in this house. I did sub orange juice for the lemon juice & all purpose seasoning in lieu of the thyme and they were fantastic!

    Okay, I forgot to come back and comment...these were great!!! My kids both said they were the best wings I ever made...and I must agree. I didn't bother cutting the wings, I just made full wings, and the only change I would do is more cayenne next time...maybe double it. I really recomend these wings...very tasty and very easy to make.

    The best wings. Easy to make ahead of time, just add melted butter right before cooking. A really nice break from the usual over sauced wings. Make extra because they go quickly. I served with Blue Cheese dressing. Tasty!

    Fantatic. I put the wings in plastic with a little rub the night before cooking. I used all of the other ingredints. Everybody loved them. I cooked five pounds for four people and they went. Try them-they are special.

    This is probably one of the best wing recipes I've found. So flavorful, and they still have that great kick without having to use a greasy buffalo sauce. And, since the oven temp is so high, they get super crispy in no time! Much better than haveing to flip them constantly for an hour!
