Preheat oven to 350 degrees. Line two 10-by-15-inch rimmed baking sheets with parchment paper; place a wire rack on top of each sheet. Arrange bacon in a single layer on the two racks. Evenly sprinkle with pepper and sugar.
Bake until bacon is crisp and browned, rotating sheets halfway through, 30 to 35 minutes. Pat dry with paper towels.
Couldn't be a simpler recipe, and really takes bacon up a notch! This has become a weekend staple for us.

This bacon is freaking awesome. I made it with a big Sunday breakfast for my husband and myself, and we loved it. I also saw that Lucinda puts it in a frisee salad - although I can't now find the recipe. I'm thinking you could use it in different salads, so long as the other ingredients weren't too sweet or salty - the bacon needs to stand out, as it's clearly the star.

I made this recently for a New Member Social I hosted for the chapter of MOMS Club that I belong to, and it was a huge hit. Next time, I will need to make twice the amount. Everyone was sniffing around for more and there wasn't a bit left to be found.
I use Center Cut Bacon...It has become very popular and now every family gathering must begin in the morning(so we have an excuse to make this decadent treat!)
