Herbed Bread Crumbs


This recipe for herbed bread crumbs is used to make Roast Chicken from chef Shannon Bennett's "My French Vue" cookbook.

  • Yield: Makes enough for 1 roast chicken

  • 2 tablespoons fresh finely chopped flat-leaf parsley
  • 1 teaspoon fresh thyme, leaves
  • 2 cloves garlic
  • 4 tablespoons olive oil
  • 2 ounces panko breadcrumbs (Japanese bread crumbs)


  1. Place all ingredients in the bowl of a small food processor; process until fine crumbs are formed.
