Steak Salad with Goat Cheese

Feta and gorgonzola are two other cheeses you could try with this salad. Their flavors stand up to the steak, and, like goat cheese, they have the right texture for crumbling.

Ingredients

  • 1 tablespoon Dijon mustard
  • 1 tablespoon grainy mustard
  • 2 tablespoons white-wine vinegar
  • 2 tablespoons olive oil
  • coarse salt and ground pepper
  • 1 pound skirt steak, cut crosswise into 2 equal pieces
  • 1/2 pound green beans, trimmed
  • 2 medium heads red-leaf lettuce, torn into bite-size pieces
  • 2 plum tomatoes, halved and thinly sliced
  • 4 ounces goat cheese, crumbled

Directions

  1. In a small bowl, whisk together mustards, vinegar, and oil; season with salt and pepper. Set aside.

  2. Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with foil. Place steaks on sheet; season with salt and pepper. Broil 4 to 6 minutes for medium-rare. Transfer to a cutting board; tent with foil. Let rest 5 minutes; thinly slice crosswise.

  3. Meanwhile, in a medium saucepan of boiling salted water, cook green beans until crisp-tender, 4 to 6 minutes; drain. Run beans under cold water; drain well.

  4. In a large bowl, combine dressing, steak, beans, lettuce, and tomatoes; toss. Sprinkle with cheese.

    This was so delicious and easy. I added 4 small red potatoes sliced 1/4" thick and simmered in pot with water and 1/2 c. white wine for 6 minutes. Seasoned with kosher salt. Then added beans to same pot for another 6 minutes. The potatoes absorb the dressing nicely. Husband loved it!

    It's clear she's not going to print the nutritional information for all the recipes, so it's clear that making those same comments over and over on every recipe is a waste. Eat the salad or don't--find the information or don't. Just don't keep posting the same thing over and over on the website.

    I too always look for nutritional information on recipes. Would love if you would add this to your daily recipes.

    I second that about the nutritional info! It really would make me wanna try a lot more of the recipes, this one looks great by the way ;)

    I agree with lisagayle40 --- the nutritional information with all recipes would be a great plus AND I would try more of the recipes if it were there. Sometimes I delete the entries without even opening them as I am ALWAYS concerned with the nutrition data.
