Cheddar-Carrot Balls

These cheddar-carrot balls are perfect as an after-school snack that's fun for kids -- and a guilty pleasure for adults.

Ingredients

  • 4 ounces cold cream cheese (1/2 bar)
  • 2 ounces yellow cheddar cheese, finely grated (1 cup loosely packed)
  • 1 carrot, finely grated (1/2 cup)

Directions

  1. In a medium bowl, with a wooden spoon, combine cream cheese, cheddar cheese, and carrot. With moistened hands, gently form 12 balls, each equal to 1 level tablespoon of mixture. Serve or refrigerate, covered with plastic wrap, up to 2 days.

    Mmm, excellent level of sneakiness in this kids recipe. (For adults I'd add cayenne, worchestershire, diced pimento... even green bell pepper for crunchiness.)

    this recipe not printing again, even saved it to my collections which worked last time to be able to print. Any ideas why the recipes won't print anymore?

    I love cayenne pepper and a little nutmeg with my mac and cheese. That may do the trick.
