Ingredients

  • 2 tablespoons white-wine vinegar

  • 2 tablespoons olive oil

  • Coarse salt and ground pepper

  • 3 bunches arugula (about 12 ounces total), thick stems removed

  • 1/4 medium red onion, thinly sliced

  • 1 1/2-pound piece chilled seedless watermelon, rind removed, cut into small chunks (2 to 3 cups)

  • 4 ounces feta cheese, crumbled

Directions

  1. Step 1

    In a small bowl, whisk together vinegar and oil. Season with salt and pepper.

  2. Step 2

    In a large bowl, combine arugula and onion; toss with dressing to taste. Gently toss with watermelon and feta, and serve.

    I became so addicted to this combination, I (gasp) purchased a watermelon in February just to have the salad. It does not maintain structural integrity very well but it is still a delight.

    Since I didn't have white wine vinegar I substituted balsamic vinegar...yummmmm!

    i used a spring mix of greens for the lettuce, tasted pretty good. it surprised me-lettuce and watermelon? was at hit at my "guinea pig" dinner. i've been making the family try recipes i find here. this one is a keeper for my family.

    just remembered - don't toss too early - toss at last minute or it gets too watery. Doesn't really keep well in my opinion, but it's very good.

    This was okay. Everyone who tried it said they liked it, and it was certainly unusual. I don't know that I will ever suffer from a serious craving for it, but I'd eat it if the opportunity arose. Probably won't make it myself unless I have all the ingredients handy
