Bruce's Spicy Peanut Slaw


Author and chef Bruce Aidells likes to serve this side dish as a delicious accompaniment to his apple chicken sausage.

  • 1 medium head green cabbage, (about 2 pounds), cored and shredded
  • 1/2 medium head red cabbage, (about 1 pound) , cored and shredded
  • 2 medium carrots, peeled and shredded
  • 1 red bell pepper, stemmed, seeded, and thinly sliced
  • 4 scallions, thinly sliced
  • 1 small red onion, finely chopped (1 Cup)
  • 1 Granny Smith apple, cored and shredded
  • 2 garlic cloves, very finely chopped
  • 1 to 2 teaspoons crushed red-pepper flakes
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup beer
  • 1/4 cup light-brown sugar
  • 2 tablespoons freshly squeezed lemon juice, plus more to taste
  • 1 tablespoon malt, cider, or distilled white vinegar, plus more to taste
  • 1 cup dry roasted peanuts
  • Coarse salt and freshly ground pepper


  1. In a large bowl combine green and red cabbage, carrots, red bell pepper, scallions, red onion, apple, garlic, and red-pepper flakes. Toss to combine. In a second medium bowl, combine the mayonnaise, sour cream, beer, sugar, lemon juice, and vinegar. Mix well. Stir into the vegetable mixture along with peanuts. Season with salt and pepper. Add lemon juice and vinegar, to taste.
