Preheat oven to 350 degrees. Lightly butter an 8-inch square pan. Line with parchment paper, leaving an overhang on two sides; butter the paper. Set aside.
In a medium saucepan, place butter and cocoa; heat over low, stirring constantly, until butter has melted and mixture is smooth. Remove from heat; stir in sugar, egg, flour, milk, and vanilla until combined.
Spread mixture evenly in prepared pan. Bake until a toothpick inserted in center comes out clean, 25 to 30 minutes. Remove pan from oven; sprinkle top evenly with marshmallows, walnuts, and chocolate chips. Return to oven, and bake until marshmallows puff, about 3 minutes. Cool to room temperature on a wire rack, about 1 hour. Then refrigerate until topping hardens, about 1 hour. Use paper overhang to lift from pan; cut into 12 bars.
Store at room temperature in an airtight container up to 5 days.
@CandyKay: I think your idea sounds fantastic (we prefer s'mores to rocky road over here anyway). Why couldn't you add those? I say graham away.

Just use equal amount of flour for the cocoa. Like making a blonde.
would sub out graham cracker meal for the cocoa,if making for my niece,who HATES chocolate. Then use white chocolate chips. May have to leave out the brown sugar also? Should be interesting!!! J.

Cocoa is generally found in the baking aisle while hot cocoa is found in with the beverages. No troubles finding either in our grocery stores. Thanks for a great recipe Nancy from a Wellander.
White cocoa does exist. It's usually found as a hot cocoa though. You'd have to adjust the sugar called for in the recipe a little as the cocoa will contain sugar. Try Zingermanns deli or King Arthur flour online. They both carry unique and hard to find baking ingredients.

I can't have chocolate, do you think we can do this with white chocolate? I use to love rocky road candy, one of my favs. Hopefully someone will respond about the chocolate
