The Rachel Sandwich

Ingredients

  • 5 ounces sliced roasted turkey breast
  • 2 slices sourdough bread
  • Unsalted butter
  • 2 tablespoons Russian dressing
  • 3 thin slices Swiss cheese
  • 1/4 cup Creamy Coleslaw

Directions

  1. Step 1

    Heat a griddle or large skillet over medium-high heat. Layer turkey slices on griddle and let cook for 1 minute.

  2. Step 2

    Butter one side of 1 slice of bread and spread opposite side with Russian dressing; place buttered-side down on griddle. Butter one side of remaining slice of bread and place buttered-side down on griddle; top with cheese. Turn turkey and top with coleslaw. Cook until turkey and bread are warmed through and cheese is melted, 2 to 3 minutes. Sandwich turkey and coleslaw between bread. Slice and serve immediately.

    Martha's recipe for Russian dressing is in the Nov. 2008 Living Magazine. I just made the homemade Russian dressing to go along with her "Turkey Reubens" in the same issue and they were a hit with the family. For the dressing, just mix 1/2 cup mayo, 2 tbsp. ketchup, 2 tbsp. pickle relish, 2 tbsp. sweet pickle relish, 2 tbsp. fresh lemon juice, 1 tsp. Worcestershire sauce, 1/2 tsp. salt and 1/3 tsp. ground pepper. Just mix. Hope this helps you all out! Judy

    I, too, cannot eat processed meats. I only purchase Boar's Head at the Deli. I have never had success when roasting turkey breasts. Would love to have Chris's recipe. Thanks

    I can't eat bought processed deli/juncheon meats. Chris Schlesinger had
    roasted turkey breast for his sandwiches. The meat looked so tender and juicy. Would he share his recipe with us?
