Sweet-Potato Bourbon Bundt Cake

This recipe for sweet-potato bourbon bundt cake is from "Bundt Classics" by Dorothy Dalquist.

Sweet-Potato Bourbon Bundt Cake

Ingredients

  • 1 1/2 cups firmly packed dark brown sugar
  • 1/3 cup unsalted butter, softened, plus more for pan
  • 2 large eggs
  • 1 cup cooked sweet potato
  • 1 teaspoon pure vanilla extract
  • 2 3/4 cups all-purpose flour
  • 3/4 cup milk
  • 1/3 cup bourbon or apple juice
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 3/4 teaspoon salt
  • Nonstick cooking spray with flour
  • 3 tablespoons chopped pecans
  • Bourbon Syrup

Directions

  1. Preheat oven to 325 degrees.

  2. In the bowl of an electric mixer fitted with the paddle attachment, mix together brown sugar, butter, and eggs until very light and fluffy. Add sweet potato and vanilla; beat to combine. Add flour, milk, bourbon, baking powder, pie spice, and salt; mix until just incorporated. Lightly spray a 10 or 12 cup Bundt pan with cooking spray. Sprinkle bottom and up sides of the pan with pecans. Pour in cake batter.

  3. Bake until a toothpick inserted in the center of the cake comes out clean, 50 to 60 minutes. Let cool 10 minutes. Remove from pan; cool completely on wire rack. Brush cake with bourbon syrup. Serve cake slices with any remaining syrup.

    I have been wanting to make this cake for 2 weeks....it wasn't a cake, it was a giant gummy bear! I was so disappointed. Someone please tell me what went wrong.

    So yummy! I used the dark orange sweet potatoes and since I didn't have bourbon I substituted Grand Marnier instead. Really a delicious and moist cake.

    This cake was terrible, couldn't taste the sweet potato-cake tasted like spiced flour. This glaze hardened to a grainy consistency-followed directions on the website, not the video. I wonder if I did something incorrect?

    You don't need to watch the video for the ingredients and directions to make the bourbon sauce. Just look at the bottom of the list of ingredients and you will find printed in "blue" Bourbon Syrup. Click on that and the bourbon syrup recipe will be there.

    Took this cake to a autumn get-together last night and it was a big hit. Easy to make. My only change was to add more chopped nuts into the batter. Would be REALLY good with whipped cream.......

    Copied from the video:

    Bourbon sauce

    1 cuup sugar
    1/2 Cup water
    1 Tablespoon butter
    2Tablespoons bourobne
    1 teaspoon vanilla
    Combine all ingr. boil 5 min. brush over cake.

    My computer is old (like me) and does not do video, so I can not get the recipe for the bourbon syrup. Would someone please supply the recipe? I tried search but did not get anything.

    This is an incredibly tasty cake. And it's not that difficult to make. I was a little worried about that bourbon syrup, but it turned out wonderfully. I don't usually watch videos like this one, but it really made the whole cake/syrup process doable.
