Peas and Pearl Onions

A handful of fresh mint brightens peas and pearl onions, making this dish an ideal side for a rich meal.

Ingredients

  • 10 ounces red pearl onions
  • Coarse salt
  • 1/2 ounce (1 tablespoon) unsalted butter
  • 2 tablespoons water
  • 2 packages (10 ounces each) frozen petite green peas
  • 1/2 cup small fresh mint leaves

Directions

  1. Cut an X in stem end of each onion. Cook in salted boiling water for 1 to 2 minutes. Drain, and peel.

  2. Heat butter and water in a pan over medium-high heat. Add onions, and cook for 4 minutes. Stir in peas and 3/4 teaspoon salt, and cook for 2 minutes. Stir in mint. Serve immediately.

    I loved this dish and so did my family! Super easy to make. I didn't have any pearl onions so I used sliced red onion. Thanks for the recipes this is a keeper. :)

    This was really tasty. I made a few changes - added a couple of herbs and switched the mint to cilantro, because my husband is allergic to mint - I posted about it to my blog if you're looking for more details. Anyway, I liked this a lot but I wouldn't say it fed 8. 6 would be a little more accurate, IMHO.
