2 packages (10 ounces each) frozen petite green peas
1/2 cup small fresh mint leaves
Directions
Cut an X in stem end of each onion. Cook in salted boiling water for 1 to 2 minutes. Drain, and peel.
Heat butter and water in a pan over medium-high heat. Add onions, and cook for 4 minutes. Stir in peas and 3/4 teaspoon salt, and cook for 2 minutes. Stir in mint. Serve immediately.
This was really tasty. I made a few changes - added a couple of herbs and switched the mint to cilantro, because my husband is allergic to mint - I posted about it to my blog if you're looking for more details. Anyway, I liked this a lot but I wouldn't say it fed 8. 6 would be a little more accurate, IMHO.
