Preheat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil. Place fish on sheet; season with salt and pepper, and set aside.
In a food processor, pulse pistachios, parsley, and garlic until coarsely chopped, 15 seconds. With machine running, add oil in a steady stream; blend until mixture is finely chopped. Season with salt and pepper.
Top fish with pistachio mixture. Roast until fish is opaque throughout, 12 to 14 minutes. Serve with lemon wedges.
I love the pistachio topping on a piece of white fish. I actually use this on Tilapia and find it delish!
Really awesome. I had Rock fish, so I swapped that... and I had only dill in the house, so I swapped that for the parsley. Served with garlic and lemon roasted vegetables. Dee-lish.
I really liked this! Great for when guests are over for dinner - you can easily prepare the fish before they arrive and simply pop in the oven when it is time for dinner, and you will have a delicious meal.
