Stuffed Jalapenos

These stuffed jalapenos make a great party appetizer. The recipe can easily be doubled for a crowd.

Ingredients

  • 4 ounces cream cheese, room temperature
  • 1/2 cup grated sharp cheddar
  • 6 large jalapenos, halved and seeded
  • Coarse salt and ground pepper

Directions

  1. Preheat oven to 450 degrees. In a small bowl, mix together cream cheese and cheddar. Season with salt and pepper. With a small spoon, fill each jalapeno half with about 1 tablespoon cheese mixture. Place peppers on a parchment-lined baking sheet and bake until cheese is browned and bubbling, about 10 minutes, rotating sheet halfway through.

    I've made these 3 or 4 times, and they've been a big hit every time. They totally satisfy a jalapeno popper craving!

    Made these this week and they were awesome! I cleaned out all the seeds and ribs and even rinsed out the jalapeno halves and they were not spicy at all. I like some spice, so next time I won't rinse them and I might leave a little of the ribs in. After they came out of the oven and cooled a bit, they were gone in minutes!
