In a medium nonstick skillet, bring 1/4 cup water to a boil. Add tomatoes and red-pepper flakes; top with tilapia, and season with salt and pepper. Cover, and cook 3 minutes. Add arugula. Cover, and cook until tilapia flakes easily with a fork, about 2 minutes. With a slotted spoon, transfer tilapia and vegetables to a plate (reserve skillet).
Make sauce: Off heat, add butter, lemon juice, and capers to skillet; swirl until butter has melted. Season sauce with salt and pepper. Serve tilapia over arugula and tomatoes; drizzle with sauce.
Awesome dish! I used spinach instead of arugula and it came out superb. It's light, healthy, full of flavor and easy to make. You couldn't ask for any better. The sauce holds the key to the flavor. I used a little more lemon juice than butter, but that's just my preference. I highly recommend it.
I thought this was extremely delicious and extremely fast and easy! I was feeding 4 people and everyone loved it. Not a big deal to do two batches. I just loaded up the pan twice. I will definitely make this again and again.

Mmmmmm, the capers and lemon juice pack a real flavor punch to normally bland tilapia. This is super easy, very refreshing, and delicious.
I was really apprehensive about this meal. For some reason I didn't think it would turn out good, but I was wrong. It was REALLY easy, and really quick, and quite good and fresh tasting. We had it with a side of mushroom risotto and really liked it. I will make this again.

I loved this recipe. I used arugula, and it's pepperiness was perfect with the red pepper flakes!

This was really good and easy. I sauteed the tomato with a clove of garlic, then added the water with a little white wine. I used spinach too vs. arugula. Really good and really quick.

I used sole rather than tilapia, and mixed baby greens instead of arugula. It turned out fantastic, and was super simple to make. I would guess the arugula would make it out of this world, but unfortunately, I was out.
