Tilapia with Arugula, Capers, and Tomatoes


Sauteed fish goes mildly Mediterranean, with bright vegetables and a buttery pan sauce.

  • 1/2 cup cherry tomatoes, halved
  • 1/4 teaspoon red-pepper flakes
  • 1 tilapia filet (8 ounces)
  • Coarse salt and ground pepper
  • 2 small bunches arugula (about 3 cups)
  • 1 tablespoon butter
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon capers, rinsed and drained


  1. In a medium nonstick skillet, bring 1/4 cup water to a boil. Add tomatoes and red-pepper flakes; top with tilapia, and season with salt and pepper. Cover, and cook 3 minutes. Add arugula. Cover, and cook until tilapia flakes easily with a fork, about 2 minutes. With a slotted spoon, transfer tilapia and vegetables to a plate (reserve skillet).

  2. Make sauce: Off heat, add butter, lemon juice, and capers to skillet; swirl until butter has melted. Season sauce with salt and pepper. Serve tilapia over arugula and tomatoes; drizzle with sauce.

    Excellent. One of the best and tastiest fish recipes I have encountered in a long time. One slight adaptation: instead of 1/4 cup water I add half water and half dry white wine. Makes it even better. Has become a regular for us.

    Highly recommend! My teen and I loved this recipe. The cooked arugula was great, loses its peppery flavor I think. Instead of water, I used canned chicken broth and lawrys garlic parsley salt instead of regular salt. I also added some extra chicken broth at the end to make more of a sauce.

    This is lovely and it is less than 10 minutes to make it. I did not have arugula or cherry tomato so I used spinach and I sliced regular tomato instead. I also added fresh basil. I will be making this on a regular basis now with any mild white fish like tilapia.

    I really enjoyed this! The flavours just worked - butter and lemon is always delicious but paired with capers and red pepper flakes, it was unique and really delicious. I will definitely be making this again.

    Awesome dish! I used spinach instead of arugula and it came out superb. It's light, healthy, full of flavor and easy to make. You couldn't ask for any better. The sauce holds the key to the flavor. I used a little more lemon juice than butter, but that's just my preference. I highly recommend it.

    I thought this was extremely delicious and extremely fast and easy! I was feeding 4 people and everyone loved it. Not a big deal to do two batches. I just loaded up the pan twice. I will definitely make this again and again.
