Sesame-Lime Rice

Stir toasted sesame seeds into rice for an Asian touch.

Ingredients

  • 1 cup long-grain white rice
  • Coarse salt and ground pepper
  • 2 tablespoons sesame seeds, toasted
  • 1 tablespoon vegetable oil, such as safflower
  • 1/2 teaspoon finely grated lime zest
  • 1 tablespoon fresh lime juice

Directions

  1. In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice, season with salt and pepper, and return to a boil. Reduce to a simmer, cover, and cook just until tender, 15 to 17 minutes. Remove pan from heat, and let stand, covered, for 5 minutes.
  2. Toss rice with sesame seeds, oil, and lime zest and juice. Season with salt and pepper, and fluff gently with a fork.

Variations

For a variation on this dish, replace vegetable oil and lime zest and juice with same amounts of extra-virgin olive oil and lemon zest and juice; use 1/4 cup toasted pine nuts instead of sesame seeds.

    My sister-in-law made this rice the using the helpful hint (variation version) the other week as a side dish. I loved it soooo much I kept going back for more and I am a Very picky eater. I will be making this tonight!

    Served with the teriyaki chicken from same issue, perfect together. This will also be good with Thai and Vietnamese food. Highly recommend.
