Cabbage Salad

Ingredients

  • 2 cups chopped red cabbage
  • 1 tablespoon finely chopped red onion
  • 3/4 cup chopped cucumber, preferably seedless
  • 1 cup raisins
  • 1/4 cup chopped cilantro
  • 1/4 cup toasted sunflower seeds
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 1 tablespoon garam masala

Directions

  1. Place cabbage, onion, cucumber, raisins, cilantro, and sunflower seeds in a large bowl; set aside.
  2. In a small bowl, whisk together olive oil, lemon juice, and garam masala. Drizzle over cabbage mixture and toss to combine.

    Fabulous - Zesty - Colorful....& nutritional salad! The presentation of this salad on a buffet table is gorgeous - then the taste - phemonmenal - the reviews from friends and family have been stellar. Both genders requested recipe and even the tween & teen guests enjoyed it! Variations on the salad abound only limited by your preferences and imagination. I have substitued pine nuts and craisins - dried cranberries and added cucumber Enjoy it with cedar plank grilled salmon - A+ tasty coupling!
