Chocolate Shortbread

Chocolate Shortbread

Source: Everyday Food, October 2005

Ingredients

  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 3/4 cup all-purpose flour
  • 1/2 cup confectioners' sugar
  • 3 tablespoons unsweetened cocoa powder
  • Simple Icing

Directions

  1. Preheat oven to 300 degrees. With an electric mixer, beat butter until creamy. Add flour, sugar, and cocoa; mix just until combined. (Chill dough in the refrigerator 10 minutes if it is too soft to handle.)

  2. Pat dough into an 8-inch round cake pan; press edges down with the tines of a floured fork. Bake until firm, 30 minutes. Immediately score into eight wedges; cool completely. Turn out of pan; break wedges apart. Decorate with icing .

    Wonderful flavor and super easy recipe. I've made it about 3 or 4 times and it's always simply delcious. The two men in my life enjoy this. And I don't add any icing. It is delicious without it. Thanks, Martha, you are my hero!

    Really delicious flavour... very subtle, but nice. I didn't bother with the icing.
    I'm not sure if I went wrong somewhere, but the cookie consistency after baking was a little soft and chewy. It was really good, just I'm not sure if that's what is supposed to happen with shortbread cookies.

    This is just what I was looking for! I added 1 Tablespoon of milk. I scored them into 16 pieces rather than 8 and spread them with melted chocolate mint pieces. *yummy

    Very tasty. This turns out great, but it's not very sweet, and reminiscent of dark chocolate. It is kind of "one note". (I do not favor the idea of icing, but I did not try it. Instead I sunk a chocolate chip in the center of each cut piece and that was good.) But next time I will add a drizzle of orange glaze on top of these. The glaze would add a bit of sweetness, complementary orange flavor, and also a bit of "wetness" to offset the sandy shortbread texture.

    I may know what Gale's talking about: 1 C flour, 1/2 C cornstarch, 1/2 C powdered sugar, 3/4 C softened butter. For chocolate shortbread, substitute 1/4 C cocoa for 1/4 C flour. Form a single round, cut into wedges

    Wow! Yes, Gale could you please share your recipe?!! I wanted to say, that I printed some MSL recipes yesterday, and the MS Kmart ads are causing it to take both sides of the paper! So, I hand wrote this recipe. Some of the "repairs" to fix this problem, sound too complicated for me! Does anyone know an easy fix? Thanks

    I think that this lovely looking shortbread may need more butter to bind the flour and sugar.

    Shortbread is dry and crumbly if you work it too much. Gentle handling of the dry ingredients into the butter is the way to go.

    My recipe is a little different, and people hold their breath til Christmas because they know they are getting cookies as gifts.
