Glazed Pork Chops with Mango Salsa

Use our three tips to ace a taste test without adding fat: Start with well-trimmed chops, brush on a spicy glaze instead of oil, and broil the meat instead of sauteing. Look for canned chipotle chiles in adobo -- a zesty tomato-based sauce -- by the Mexican foods. Spoon out 1 tablespoon of sauce, freeze what's left in an ice-cube tray, and store for future use.

Ingredients

  • 4 bone-in pork loin chops (each 8 to 10 ounces and 1/2 inch thick), trimmed of fat
  • Coarse salt and ground pepper
  • 1 tablespoon adobo sauce
  • 2 tablespoons brown sugar
  • 1 mango, peeled and cut into 1/2-inch pieces
  • 1/2 small red onion, finely chopped
  • 1 small jalapeno chile (ribs and seeds removed), finely chopped
  • 2 tablespoons fresh lime juice

Directions

  1. Step 1

    Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil. Place pork on baking sheet; season with salt and pepper. Spread with adobo sauce; sprinkle with brown sugar.

  2. Step 2

    Broil until an instant-read thermometer inserted in thickest part of a chop, avoiding bone, registers 155 degrees, 8 to 10 minutes. Let rest 5 minutes before serving.

  3. Step 3

    Meanwhile, make salsa: In a medium bowl, combine mango, onion, jalapeno, and lime juice. Season with salt and pepper, and toss to combine. Top chops with salsa, and serve with Arugula Cucumber Salad, if desired.

    I served this with the Arugula cucumber salad for my friends birthday. She is on a diet so it worked out perfect. She loved it so much that she is telling everyone about this recipe. It is so delicious

    these pork chops were delicious. i mixed my adobo sauce and brown sugar together before glazing the pork chops and think it cut down on the heat. didnt care for the mango salsa but will probably try it with the peach suggestion. definitely will make it again!!!

    You know, I think part of becoming a good cook is looking at a recipe in terms of how you can adapt it for your family's own needs and tastes. My husband doesn't like green bell peppers so I substitute other things in recipes that call for them. And I also think there is plenty of negativity in the world already without adding to it unless it can actually serve some good purpose. I want to go to sleep every night knowing that I have done my part to spread peace, love, joy, and healing.

    Wow ladies calm down, I am sure this recipe was layed out months ago by some nice wasp who did not have a clue as to this day, and automaticly went onto the web site. I do not believe any disrecpect was meant. This worked quite well with chicken. Peace and love.

    Dear Whimsyt, we can substitue the pork recipes with chicken! It's actually VERY good! We are different, we are SUPPOSED to be! But, we can't expect everyone else to understand that. So, I don't fret that a lot of people eat things that I won't. If the recipe looks good, otherwise, find ways to work around the offensive part, and you've made a blessing out of something that doesn't seem like one! Tov Rosh Hashanah to those who celebrate!

    I know you can't keep track of everybody's various holidays, but it really was a bit insensitive to send a PORK recipe on ROSH HOSHANAH. You might want to just think about not sending PIG-related recipes on the major Jewish High Holy Days.

    I loved it , as did my family! (all adults, kids might not be so happy about it!) I did make a couple of changes. Used peaches instead of mangos because they were plentiful and cut the onion by 50%. I could eat the salsa as a side dish!
    We are all taking a beach vacation next week, and this is the meal I will be preparing when it is my turn to cook.

    This recipe was just okay. The pork was spicier than I anticipated it would be because of the adobo sauce. The dish tasted healthy, but I probably won't be making it again.
