Egg Whites and Avocado

  • 2 hard-boiled eggs whites, cut into 1/2-inch dice
  • 1/2 avocado, peeled, pitted, and cut into 1/2-inch dice
  • Coarse salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil, optional


  1. In a small bowl, combine egg whites and avocado. Stir gently to combine. Season with salt and pepper. If desired, drizzle with olive oil, and toss gently. Serve immediately.
