- 1 inch-thick boneless shell steak
- Olive oil
- Coarse salt and freshly ground pepper
Heat oven to 500 degrees. Heat a medium cast-iron skillet over high heat until it begins to smoke. Rub steak lightly with oil and season with salt and pepper. Place in pan and cook until brown 1 to 2 minutes. Turn and brown second side, 1 to 2 minutes.
Transfer to oven and cook to desired doneness, about 7 minutes for medium rare.
