Tortilla Soup with Black Beans

Ingredients

  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon chili powder
  • 2 cans (14.5 ounces each) diced tomatoes in juice
  • 2 cans (15 ounces each) black beans, rinsed and drained
  • 1 can (14.5 ounces) reduced-sodium chicken broth
  • 1 package (10 ounces) frozen corn kernels
  • Coarse salt and ground pepper
  • 1 cup crushed tortilla chips, plus more for serving (optional)
  • 1 tablespoon fresh lime juice, plus lime wedges for serving

Directions

  1. In a large saucepan, heat oil over medium. Cook garlic and chili powder until fragrant, about 1 minute. Add tomatoes (with juice), beans, broth, corn, and 1 cup water; season with salt and pepper.

  2. Bring soup to a boil; reduce to a simmer. Add tortilla chips; cook until softened, about 2 minutes. Remove from heat; stir in lime juice, and season with salt and pepper. Serve soup with lime wedges and, if desired, more chips.

    Easiest soup I ever made! I followed the advice of another review and omitted the chili powder and added an onion, cumin and oregano and cilantro. Everyone loved it!

    Haven't tried this yet, but sounds great! It seems like the tortilla chips IN the soup, softened, would make them mushy. What's the consensus?

    After becoming a vegetarian about 2 yes ago, I've missed chicken tortilla soup! So I love that this one doesn't have the chicken in it... but what does everyone (especially those that have made this) think about switching out the chicken broth for vegetable?

    This is by far one of the EASIEST recipes out there and always a crowd pleaser!! It is a favorite in our house!! Easy to freeze too....minus the tortilla chips...Great to eat with Doritos SCOOPS!!!

    Outstanding!!! My son and I loved it! I added some onion powder, dried cilantro, extra chili powder & garlic. The lime juice yielded an extra fresh taste.

    I also saute an onion with the chicken. I use only 1 large can of crushed tomatoes (not 2 cans diced) and I add a small can of diced chilli peppers, a can of drained hominy, 1.5 cups of water, I omit the chili powder use 1 Tbsp. of Cumin 1 Tbsp. of oregano and I also add in about 1/4-1/2 cup of cilantro chopped fine. I also have more cilantro for garnishing, and have shredded cheese and sour cream along with lime wedges for adding. Very easy and delicious!

    I saute an onion with this and add cilantro. It's a really quick and easy recipe. I like to eat this with a small cheese only quesadilla.

    My boyfriend and I love this soup because it tastes great, but I especially love it because it's so EASY to make. We add a chipotle hot sauce after it's served to give it an extra kick.
