Tortilla Soup with Black Beans

Ingredients

  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon chili powder
  • 2 cans (14 1/2 ounces each) diced tomatoes in juice
  • 2 cans (15 ounces each) black beans, rinsed and drained
  • 1 can (14 1/2 ounces) reduced-sodium chicken broth
  • 1 package (10 ounces) frozen corn kernels
  • Coarse salt and ground pepper
  • 1 cup crushed tortilla chips, plus more for serving (optional)
  • 1 tablespoon fresh lime juice, plus lime wedges for serving

Directions

  1. In a large saucepan, heat oil over medium. Cook garlic and chili powder until fragrant, about 1 minute. Add tomatoes (with juice), beans, broth, corn, and 1 cup water; season with salt and pepper.
  2. Bring soup to a boil; reduce to a simmer. Add tortilla chips; cook until softened, about 2 minutes. Remove from heat; stir in lime juice, and season with salt and pepper. Serve soup with lime wedges and, if desired, more chips.

    I agree with the majority of people that it is missing more spices. I made this and it is good but bland, definately needed more spices, so I added ..... 1 tsp more chili powder, 3/4 tsp cumin, 1/4 tsp garlic salt and 1/4 tsp cayenne pepper and more garlic cloves. After doing this...it was fantastic!! Great flavor! Would make this again with my added spices!!

    Definitely missing some spices. It is really good with a tablespoon of chili powder and ground garlic, onion, and cumin to taste, and a pinch of chipotle powder if you have it. I add shredded chicken breast as well.

    I make this soup regularly now because it's hearty, filling, full of flavor and very quick,easy and cost effective to make. Sometimes I add roasted chicken breast to bump up the protein count, and I also add a handful of fresh spinach leaves. Additionally, I sometimes serve it with a little dollop of Greek yogurt / sour cream. But what really makes the soup over the top are the crunched up tortillas. It travels & reheats great, making it a great soup to take into the office.

    It's good but a little bland. I like my tortilla soup with more "oomph" behind it. This one tasted better after I put a bunch of hot sauce on it. I'm not much of a cook, so I don't know exactly how to modify this recipe to improve, but I might suggest adding some salsa and hot sauce, and perhaps more garlic, onions, and chili powder.

    I just made this soup, and it was pretty good. It was very quick and easy, which really made it great. I feel like it could have some more flavors besides the overwhelming tomato, although I really love tomatoes so it's not much of an issue for me. I followed the recipe exactly, other than one extra clove of garlic and a little Tapatio. Next time, I'd add an onion, drain a bit of the tomato juice and compensate with chicken broth, and add a diced jalapeno.

    This was really delicious! I added the chicken too. Also, I used the canned tomatoes as directed but added fresh prepared salsa. Also, I chopped fresh cilantro into the soup right before it was done. I used lime juice as directed but added some lime zest too. This turned out really great! Will definitely make this again.

    YUM-E! I made this for the first time while the kids were at school today thinkging it would take a long time. It was super quick and filled the house with a fragrant smell. I doubled the recipe and added shredded chicken. I like the suggestion of adding the chips to the bottom of the bowl. I past the recipe onto lots of my working mom friends who need something quick, easy, tasty

    Oh my, we loved this! I made it as directed except using lemon juice in place of lime. I was surprised at how tasty this was since it was so simple and easy. I let it simmer for about 30 minutes as well. I took another reviewers suggestion and added the chips to the bottom of my bowl.

    This is similar to a recipe that I make. I would suggest replacing the cans of diced tomatoes with a tomato/green chili product like Rotel for extra kick. They make several new versions, like cilantro and lime, which has become my new favorite! Want to serve more? Add hominy, navy beans, pinto beans, and black-eyed peas and more broth.

    i keep misplacing my everyday food magazine that this recipe was printed in...my husband and i have become very addicted to this soup. it is so quick and easy and now that i am unsuccessful finding my magazine i am going to (finally) print out the recipe and keep it in my recipe folder...in my kitchen...where it belongs!!

    When I followed the recipe it was very thick and not soup-like, so I doubled the chicken stock and added a diced jalapeno for heat. I also doubled the lime juice and this helped all the flavors pop better. Very delicious!!

    I made this the day the book came in the mail! I had always wanted to try tortilla soup. I ROCKED this dish! I too added shredded chicken. But it seemed like it needed another dimension so I added quite a bit of chipotle powder. I also LOVE black beans and added an extra can. I added extra lime juice. I also simmered it for a lot longer. I served with sour cream, lime quarters, crushed chips, and avocado slices, and cilantro on the side. Mmmm!

    I made this the day the book came inthe mail! I had always wanted to try tortilla soup. I ROCKED this dish! I too added shredded chicken. ut it seemed liek it deeded another dimension so I added quite a bit or chipotle powder. I also LOVE black beans and added an extra can. I added extra lime juice.     My whole family loved this one and it was super easy to make - just dump everything in and let it simmer! I added shredded chicken and garnished with Cheddar cheese and the lime juice - yummy!

    My husband an I also thought this was great. I garnished with cheese and sour cream. I also added chips to the bottom of the bowl so they would not be too mushy - keep up the great ideas - it was quick, easy, and delicious.

    My husband and I also thought this soup was delicious. I added chopped, leftover roasted chicken to make it a little heartier, and simmered the soup for about 45 minutes to really blend the flavors. I crushed the chips into the serving bowls, rather than add them to the pot, so that leftovers won't be full of mushy chips. The chips softened just fine in the bowls. We are not super big eaters, so for us 1/2 a recipe yielded 4 servings.
