Grilled Mozzarella Sandwiches

Turn grilled cheese into an adult dish with creamy buffalo mozzarella and flecks of fresh thyme.

Ingredients

  • 1 pound fresh buffalo mozzarella, cut into 4 equal pieces about 3-inches by 4-inches
  • 8 1/2-inch thick firm white sandwich bread
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme, leaves
  • 1 teaspoon coarse salt
  • A grating of nutmeg
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons unsalted butter

Directions

  1. Place the mozzarella on 4 slices of the bread. Cover with the remaining slices to form sandwiches. Trim the crusts off to make perfect 4-inch squares.

  2. In a wide shallow bowl, whisk the eggs. Add the cream, thyme leaves, salt, and nutmeg. Whisk until well blended.

  3. In a 10 to 12-inch nonstick saute pan, heat 2 tablespoons of olive oil over medium-high heat until smoking. Add 1 tablespoon of the butter and cook until the sizzling subsides. Dip 2 of the sandwiches into the egg mixture, turning to coat, place in the pan, and cook until golden brown on the first side, about 2 minutes. Flip over and brown on the other side. Transfer the sandwiches to individual plates and repeat the process with the remaining 2 tablespoons olive oil, 1 tablespoon butter, and 2 sandwiches. Cut in half, and serve immediately.

    This was a disappointment. Thought that the batter was unnecessary, and certainly not any healthier. I made some with buttered bread, like normal grilled cheese, and they were better. The real problem was that the moisture from the fresh mozzarella made the bread soggy inside the sandwich. Will not make this again.

    I wasn't going to complain because I hate when people complain... but seriously If I watch that Emeril commercial one more time I am going to scream. While trying to watch one or two videos I am forced to watch the same commercial at least 4 times.. It is enough to make me leave the site for sure! I'm sorry I love Martha and Sarah but this is too much!

    Guess my bread soaked up too much of the egg/cream mixture b/c it was horrible! My advice would be to QUICKLY dip in the egg mixture!

    I used wheat bread instead of white and it was delicious! Filling and healthy. A much better alternative to the white/American cheese/butter version of grilled cheese sandwiches.

    I make a similar sandwich, adding tomato and basil.
