Chicken Burgers

In this recipe, submitted by Everyday Food reader Deurie Barker of Sanford, North Carolina, dark-meat chicken makes the patties as savory and juicy as beef burgers. Saute the vegetables until they're fully tender for the best flavor and texture.

Ingredients

  • 2 tablespoons vegetable oil, such as safflower
  • 1 small onion, finely chopped
  • 1/2 yellow or orange bell pepper, chopped
  • 1 celery stalk, finely chopped
  • Coarse salt and ground pepper
  • 1 pound ground dark-meat chicken
  • 4 hamburger buns
  • Lettuce, tomato, and mayonnaise, for serving

Directions

  1. Step 1

    In a large skillet, heat 1 tablespoon oil over medium. Add onion, bell pepper, and celery; season with salt and pepper. Cook, stirring occasionally, until tender, 8 to 10 minutes. Transfer to a medium bowl; cool to room temperature (reserve skillet).

  2. Step 2

    Add chicken to vegetable mixture in bowl; season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix to combine. Shape mixture into four 4-inch-wide patties.

  3. Step 3

    In reserved skillet, heat remaining tablespoon oil over medium; cook patties until browned and cooked through, 6 to 8 minutes per side. Place chicken burgers on buns, and top with lettuce, tomato, and mayonnaise.

    This was delicious! I sauteed a whole (small) orange bell pepper, one small onion, and the celery, along with a large clove of minced garlic, then mixed with ground chicken (I don't know if it was just dark meat - it's what I found at the store - but it was NOT breast meat). Made 2 adult size burgers and 2 kiddie burgers. Served on fresh hamburger buns with garden lettuce and thick slices of heirloom tomato plus mayo, with succotash salad (Bobby Flay recipe) with feta. Might try garlic mayo.

    Oh So worth eating! I put 4 de-boned chicken thighs with skin on along with all the other ingredients and placed in a food processor and ground up. I added fresh recau/cilantro, fresh parsley, and a squeeze of fresh lime and mixed. I placed the patties on a greased cast iron frying pan and broiled in the oven. I ate atop a bed of delicious fresh greens with corn on the cob. This recipe is a keeper. It will be one that is passed down to my own kids.

    yummy...great meal for kids...i added roasted spaghetti squash to the mix cause i had it around and it was a lovely addition.

    Delicious and nutrious that is hard to find. I have already fixed it multiple times. When I'm hunger for a hamburger I fix this instead. Didn't use dark meat bought any ground chicken or turkey.

    Love these burgers. The peppers are a key ingredient to making these juicy. Just a few modifications...I did not specifically buy "dark meat". I purchased regular ground chicken. I used a combo of red and yellow peppers just for color, added a couple dashes of liquid smoke, Worcestershire sauce, garlic powder, and poultry seasoning. Fabulous!
