Calzone
Popular British chef Jamie Oliver joins Martha in the kitchen to prepare a mouthwatering calzone with mushroom filling.
Heat the oven to 500 degrees, with a pizza stone placed on lowest shelf position, for at least 30 minutes.
Heat olive oil in a large skillet over medium-high heat. Add mushrooms and stir to coat. Add garlic and thyme; cook until mushrooms are softened and fragrant. Add butter and stir until melted and mushrooms are coated; season with salt and pepper.
Add tomato sauce and stir to combine. Working in batches, add spinach and cook until wilted. Continue cooking until mixture is thickened and most of the liquid has been absorbed, about 3 minutes.
Sprinkle 2 baking sheets with flour and set aside. Divide dough evenly into 4 pieces. On a lightly floured work surface, roll out each piece of dough into a 1/8-inch-thick circle, about 12 inches in diameter. Set aside.
Divide spinach and mushroom mixture evenly between rolled out pieces of dough. Top each with one-quarter of the mozzarella and season with salt and pepper. Fold dough in half over filling and crimp as desired to seal. Place on prepared baking sheet to transfer to oven, then transfer to pizza stone. Cook until dough is puffed up and golden and filling is hot, 10 to 15 minutes. Serve immediately.
These turned out amazing. I made the pizza dough with wheat flour instead of white bread flour and it turned out just fine. I used the 400 degrees/25 minute recommendation from sassypriscilla and they were just right. Thank you so much, Jamie! My roomie and I enjoyed your calzones immensely.
You know she did step all over Jamie but I just got such a kick out of the way he handled her. He was funny and he did it with such finesse! I love him even more now.
I don't have a pizza stone so I used my cookie sheet with silpat and lowered the temperature to 400. I cooked for about 25 minutes and they turned out lovely.
I love Jamie. I thought this looked a=easy and fun for kids to try, too! Martha just stepped all over that boy - that's why I set the DVR!
To add to what I just wrote...I brushed the tops with egg...made the tops just perfect! I cook from scratch everyday and this recipe is certainly going to be a constant addition to my collection. -Mom of two and a hungry hubby!
I made calzones tonight for dinner but I just made do with what I had available, since I didn't want to go out in the cold today! I altered the dough recipe and used King Arthers Unbleached Whole Wheat Flour. For the filling...broccoli, cauliflour, onion, garlic, sweet salami (tiny bit), tomato sauce and tons of cheese. The bake time took 20 minutes to lightly brown. I also divided the dough recipe in half since it was the first time trying it. Hubby loved it! Will make again!
