Tortellini with Mushroom Sauce

It's easy to turn these little twists of frozen-cheese-filled pasta into a meal.

Ingredients

  • 1 1/4 cups (1/3 of a 16-ounce bag) frozen cheese tortellini
  • 2 teaspoons olive oil
  • 8 ounces fresh shiitake mushrooms, stemmed, caps halved and thinly sliced
  • 2 garlic cloves, sliced
  • 1 cup water
  • Coarse salt and ground pepper
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon cold butter
  • 1/3 cup chopped fresh flat-leaf parsley

Directions

  1. In a large pot of boiling salted water, cook tortellini according to package instructions; drain.

  2. Meanwhile, in a large skillet, heat oil over medium-low heat. Add mushrooms and garlic; cook, stirring frequently, until mushrooms are tender, about 7 minutes.

  3. Add 1 cup water; season with salt and pepper. Cook until liquid is reduced by half, about 5 minutes. Remove from heat; add tortellini, Parmesan, butter, and parsley. Toss to coat; serve.

Cook's Note

If you find fresh tortellini, you can use that instead of frozen; cook in a pot of boiling salted water until the pasta floats to the top, about 3 minutes. The mushroom sauce can also be tossed with plain pasta, such as fettuccine, linguine, or spaghetti. Cook 2 ounces of pasta, and add 2 more tablespoons of Parmesan.

    This was delicious! I drained the excess liquid prior to adding to the tortellini, but otherwise I made it as written. Very good dish!

    Calorie count is only about 765. I think the previous poster probably made an error on the [filtered word]akes. One web site shows a half a cup having 290 calories which is incorrect. There are only 87 calories in 8 ounces of [filtered word]akes.

    substitute dried morels and save the rehydrating water for sauce; add basil and substitute heavy cream for the butter and this is amazing. I think next time I would make it a little thicker (I like a 'sticky sauce) but this would be an easy, fancy-looking dish for company when scaled up

    Thanks for including a recipe for just one person. It is always easier to increase a recipe for more people than to reduce it down for one. Less leftovers in my freezer is always nice....Ginger G

    Delicious! I found that the eight ounces of mushrooms were enough to make sauce for two people, so I just had to increase the amount of tortellini to cover us both. My sweetheart and I really enjoyed it. By the way, the unusual one serving recipe is part of a regular feature in the Everyday Food magazine called Cooking For One- I think it's a nice feature since almost all recipes are designed for families of four even though not all households consist of four people.

    This recipe was a big hit with my husband. I made it with a Buitoni family size pack of tortellini (20 oz.), and just upped the sauce ingredients a bit (not sure why the serving size was set for 1 person...kinda weird). Also, the shiitake mushrooms weren't looking so fresh at the grocery store that day, so I ended up substituting portebellos instead, which worked out great!

    Just made this with some adjustments. I used an 8-oz. package of tortellini, about 8 oz. of sliced cremimi mushrooms, and 4 garlic cloves. I skipped the butter and added a little cream instead. It was soooooooo delicious--quick, too! Thanks for a great dinner idea!

    I haven't made this yet as there must be a mistake with the number of servings. This recipe shows it serves one person. I've done a nutritional analysis on this recipe and the calories for this one serving is 1349 calories!! Please review this recipe as it looks good, but dangerous! Thanks.
