Watermelon and Wafers

Nothing could be easier -- or more appealing -- than chilled watermelon scooped from the rind and served with sweet sesame cookies.

Watermelon and Wafers

Ingredients

  • 1 small seedless watermelon, halved lengthwise
  • 1 box benne wafers, or shortbread cookies

Directions

  1. Transfer watermelon halves to 2 large platters. Scoop watermelon into bowls using an ice cream scoop. Alternatively, let guests scoop their own portions. Serve with wafers.

Cook's Note

If you can't find benne wafers, substitute your favorite shortbread cookies.
