Sweet and Sour Green Beans

Ingredients

  • 4 slices bacon
  • 1 large onion, chopped
  • Coarse salt and ground pepper
  • 1 pound green beans, trimmed
  • 1/4 cup cider vinegar
  • 1/4 cup sugar

Directions

  1. In a large skillet, cook bacon over medium until browned, 3 to 4 minutes per side. With tongs, transfer to a paper-towel-lined plate (reserve skillet with pan drippings).
  2. Add onion to skillet; season with salt and pepper. Cook, stirring occasionally, until onion starts to brown,3 to 5 minutes. Add green beans and 1/4 cup water; cook, tossing occasionally, until beans are bright green and tender, about 10 minutes.
  3. Crumble bacon into skillet; add vinegar and sugar. Cook until a syrupy sauce forms, 2 minutes, tossing to coat. Serve immediately.

    I have fixed these several times, and I always get compliments on them. My son always wants to finish them off, so I never have leftovers unless he's not at that particular meal. If you have finicky eaters, try asking them to help you make the beans. They can help crumble the bacon, stir the sugar and vinegar together, etc. Or you can give them a fun name like Greta's Great Green Beans or Grandma's Scrumptious Green Beens. Kids will usually try fun foods or foods they help create.

    I fixed this for Thanksgiving my family loved it. I also fixed green beans the regular way I had plenty of those left but the sweet and sour went in a hurry. They where great!!!!!!!
