Sour Orange Gastrique
This recipe is courtesy of Carmen Gonzalez and should be used in her Plantain-Stuffed Pork Loin recipe.

- 1 quart freshly squeezed sour orange juice
- 2 cups sugar
- 3 tablespoons honey
Combine all ingredients in a medium saucepan over medium high heat. Cook mixture until reduced by half.
