Sour Orange Gastrique


This recipe is courtesy of Carmen Gonzalez and should be used in her Plantain-Stuffed Pork Loin recipe.

  • 1 quart freshly squeezed sour orange juice
  • 2 cups sugar
  • 3 tablespoons honey


  1. Combine all ingredients in a medium saucepan over medium high heat. Cook mixture until reduced by half.
