Wild-Rice and Sausage Dressing
- Coarse salt and ground pepper
- 1 cup wild-rice blend
- 1/3 pound sweet Italian sausage, casings removed
- 1 garlic clove, minced
- 2 tablespoons chopped fresh parsley
- 1/4 cup grated Parmesan cheese
In a 2-quart saucepan, bring 1 3/4 cups water to a boil. Add salt; stir in wild-rice blend (do not add seasoning packet). Return to a boil; reduce heat to a simmer. Cover; cook until rice has absorbed all liquid, 25 to 35 minutes.
Meanwhile, in a 10-inch nonstick skillet over medium-high heat, cook sausage until browned, breaking it up into small pieces with a wooden spoon, 8 to 10 minutes. Add garlic; cook, stirring, until fragrant, 1 to 2 minutes.
In a large bowl, stir together rice, sausage, parsley, and Parmesan. Season with salt and pepper.
