Cilantro-Lime Rice

A stir-in of cilantro and lime juice transforms plain cooked rice into a lively side that's an ideal accompaniment for Mexican main dishes.

Ingredients

  • 1 cup long-grain white rice
  • Coarse salt
  • 1/2 cup fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 garlic clove

Directions

  1. In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and 1/4 teaspoon salt; cover, and reduce to a simmer. Cook until water is absorbed and rice is just tender, 16 to 18 minutes.

  2. Meanwhile, in a blender, combine cilantro, lime juice, oil, garlic, and 2 tablespoons water; blend until smooth. Stir into cooked rice, and fluff with a fork.

    This was a great recipe! I used this to make the rice for my homemade burrito bowels.. It was VERY delicious, I did double the recipe so that I could have leftovers for the next day :)

    There is no easier 'green rice' recipe than this and it was a crowd pleaser! Food processor worked perfectly. The green color was a nice compliment to the enchiladas and pinto beans. Will definitely make it again!

    this is a fantastic recipe, the first time leftover rice has retained moisture to be edible the next day.

    I found it needed a little more "zest", so I zested the lime peel into the rice and added 50% more juice and cilantro. Very easy and delish!!

    This is a favorite dish! It's easy and so much more exciting that regular old rice. The bright green color and refreshing cilantro taste is a great complement to any Mexican meal. Enjoy!

    I used a whole grocery store bunch of cilantro and added monterey jack cheese and sweet onions. Yum!

    I followed this recipe to the letter but it didn't turn out green as pictured. It was delicious nonetheless. It worked out great as an accompaniment to Martha's Spicy Bean and Cheese Soft Tacos (I made them in hard shell).

    A fast and easy rice dish. It's a real nice lime-green color and it's very refreshing too! Went well with a spicy main entree like Pineapple-stuffed Jerk Chicken. I highly recommend it!

    I made this again using a food processor and it turned out PERFECT. Delicious AND green. Yay!

    I made this rice last night and it was SO delicious and easy. It didn't look awesome and green like it does in the picture, though, and I believe it is because I used my blender, like the recipe instructed. I think a food processor would have done a much better job. The blender left very large, unchopped bits of cilantro. That was pretty in its own way, but I was looking forward to GREEN RICE! Oh well. The taste was delicious!!
