Salmon with Mango Salsa

Ingredients

  • 1/2 medium red onion, finely chopped
  • 1 jalapeno chile, minced (ribs and seeds included for more heat, if desired)
  • 1 ripe mango, peeled, pitted, and diced (about 1 cup)
  • 2 tablespoons chopped fresh cilantro, plus sprigs for garnish
  • 3 tablespoons fresh lime juice
  • 1 small cucumber, peeled and diced (about 1 cup)
  • Coarse salt and freshly ground pepper
  • 4 skinless salmon fillets, (6 ounces each)

Directions

  1. Step 1

    In a medium bowl, combine salsa ingredients, season with coarse salt and ground pepper.

  2. Step 2

    Heat broiler. Season salmon fillets with salt and pepper. Arrange salmon on a rimmed baking sheet, broil 4 inches from heat source until filets are opaque throughout, 8 to 10 minutes.

  3. Step 3

    To serve, place fillets on serving plates, and spoon salsa over fish. Garnish with cilantro sprigs, if desired.

    Great dish,good for a healthy meal.My husband loves it especially the salsa.Instead of salmon, I used dorado fillet fish and it was good..

    Loved it! I used the leftover cilantro in the rice, there is an Everyday Food recipie for Cilantro rice that goes very nicely with this dish.

    Great, healthy recipe. The mango salsa was delicious, and there is a lot left over, so I'm going to have to figure out how to reuse it tomorrow night. Didn't have time to clean the broiler, so we baked the salmon in the oven instead. I served this dish with plain white rice, which went nicely.

    GETTING THIS RECIPE FOR THE MANGO SALSA. SINCE I HAVE A MANGO IN THE FREEZER AND COULD NOT THINK OF A THING TO DO WITH IT. SINCE I LOVE SALSA ON JUST ABOUT EVERYTHING 'MEAT' I WILL GIVE THIS A TRY.
