Avocado Salad with Beets, Green Olives, and Scallions

Ingredients

  • 3 medium beets, roasted, peeled, and cut into 1/2-inch pieces
  • 2 scallions, thinly sliced
  • 1/4 cup green olives, pitted, and sliced crosswise
  • 1 avocado, halved, pitted, and thinly sliced lengthwise
  • Salad dressing, for serving

Directions

  1. Step 1

    Place beets in the bottom of a medium serving bowl. Sprinkle with scallions and green olives. Season with salt and pepper. Top with avocado slices. Serve with dressing.
