Pan-Fried Chorizo with Sherry Vinegar

Heat a large skillet over medium-high. Add 8 ounces dried chorizo, sliced 1/4 inch thick, and cook until browned, about 3 minutes. Remove pan from heat and add 2 tablespoons sherry vinegar; swirl to combine. Serve chorizo with country-style bread and Manchego cheese.
