Quick Pickled Cucumbers

  • 1 English cucumber
  • 1 tablespoon distilled white vinegar
  • 2 teaspoons sugar
  • 2 teaspoons chopped fresh dill
  • Coarse salt


  1. Step 1

    Cut cucumber crosswise into 3 equal pieces; cut each piece lengthwise into eighths.

  2. Step 2

    In a large bowl, whisk together vinegar, sugar, dill, and 1 teaspoon salt. Add cucumber spears; toss to coat. Serve, or let stand at room temperature up to 1 hour.

    I made these over the summer. I decided afterwards I'd stick to my regular way of making cucumbers... My family was just so-so over these. Said they just didn't work for them. Family doesn't have to like everything! But, I'm always trying out new cucumber recipes :-)
