Steamed Broccoli with Cheddar Sauce

Note: For an Asian-style sauce, in a small bowl, whisk together 1 tablespoon soy sauce, 1 tablespoon rice vinegar, and 1/2 teaspoon toasted sesame oil. Season with coarse salt and ground pepper.

Ingredients

  • 1 1/4 pounds broccoli
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 teaspoons Dijon mustard
  • 1 cup milk
  • 1/3 cup shredded cheddar cheese
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon ground pepper

Directions

  1. Step 1

    Steam broccoli; transfer to a large bowl.

  2. Step 2

    Heat butter in a small saucepan over medium heat until foamy. Whisk in flour; cook, whisking, until mixture darkens slightly, 2 to 3 minutes. Add mustard and milk; simmer, whisking, until thickened, 3 to 5 minutes. Remove from heat.

  3. Step 3

    Stir in cheese until just melted; season with salt and pepper. Pour sauce over broccoli; serve.

    this is absolutely one of my favorite Everyday Food recipes. use an extra sharp cheddar or add some blue cheese crumbles for more zing. i also add a pinch of cayenne. otherwise it tastes a little bland. it also stores well (in an air-tight container) for a couple of days.
